Parsley Pesto

Pesto is a great thing to have on hand and a brilliant way to add flavour, as well as nutritional benefits, to your meals and snacks. It’s a great way to get more herbs into your diet and herbs are a powerhouse when it comes to nutrition. Parsley in particular is great for its anti-oxidant content, nutrient profile and immune boosting benefits.

Making pesto from scratch guarantees the best quality ingredients are going into it. Unfortunately many of the commercial pestos available to purchase are full of vegetable oils, sunflower oil, or canola oil, which are highly processed and not something I recommend consuming. Instead, this recipe contains the nutritious and anti-inflammatory extra-virgin olive oil.

You can snack on this pesto as a dip, with crackers or veggie sticks, or spread it over a slice of toasted sourdough.

INGREDIENTS:

  • 2 packed cups parsley 

  • 1/2 cup extra-virgin olive oil

  • 1/4 cup sunflower seeds

  • 2 cloves garlic

  • Generous pinch of salt

METHOD:

  1. Add all ingredients to a blender and blitz until your desired consistency.

  2. Store in a sealed jar in the fridge.

There’s also the option to add 1/4 cup of parmesan cheese for some added flavour.
