White Chocolate Snowballs

We all love bliss balls right… but have you ever tried a white chocolate version? These are free of medjool dates and packed full of goodness. Trust me when I say you’re going to want to try them!⁠ They’re a festive recipe that you can enjoy all year round.

White Chocolate Snowballs

Gluten Free | Vegan
Serves 12

Ingredients:

  • 1 cup cashews

  • 1 cup desiccated coconut, plus more for rolling

  • 1/2 cup almond meal

  • 1/4 cup pure maple syrup

  • 1/4 cup almond butter

  • 1 tablespoon coconut milk

  • 1 teaspoon vanilla extract

Method:

  1. Add all ingredients to a food processor until smooth and sticky.

  2. Scooping out a tablespoon of mixture at a time, roll into a ball and cover in desiccated coconut.

  3. Repeat until the mixture is finished and you have 12 even truffles.

  4. Place in the refrigerator to set and enjoy as desired.

Storage: these can be kept in the fridge for up to 5 days or frozen for months (if they last that long).
