Grilled Salmon with Rice Salad

Serves 4

Prep time: 20 mins

Cook time: 40 mins

 

Ingredients:

  • 1 cup brown rice

  • 1 cup parsley, roughly chopped

  • ½ cup almonds, roughly chopped

  • 1 Lebanese cucumber, finely diced

  • ½ cup pomegranate, seeds of 1 pomegranate

  • Salt and pepper, to taste

  • 1/2 orange, juiced

 

Grilled Salmon:

  • 1 tsp extra-virgin olive oil

  • 500g salmon (4 pieces)

  • ½ lemon, juiced

  • Salt and pepper, to taste

 

Method:

  1. Start by cooking the brown rice according to packet instructions.

  2. Add the parsley, almonds, cucumber and pomegranate to a bowl. Season with salt and pepper.

  3. Allow the rice to cool before adding it to the bowl. Drizzle over the orange juice and combine.

  4. Heat the olive oil in a griddle pan and add the pieces of salmon. Drizzle some lemon juice over each piece and season with salt and pepper. Cook for 5-7 minutes on each side until cooked through and golden.

  5. Divide the rice salad between the 4 plates and place one piece of salmon on top of each to serve.
